Zucchini, like all squash, originated in Central and South America. Early European explorers brought the seeds home to the Mediterranean region and Northern Africa over five hundred years ago where it was further cultivated into what we now call zucchini in late 19th century Northern Italy. Italian immigrants then brought the new variation of this small green squash back with them to America in the 1920’s as it quickly became a staple of Italian cuisine.

While the Italian word ‘zucchini’ originally referred to a small dried out gourd used as a container to store tobacco, it was first used in print to describe the fruit (yes, fruit) in Milan around 1901. One zucchini is technically called a “zucchina”, but we don’t see that usage very often.

Baked stuffed or fried, the flowering blossoms of the zucchini are considered a delicacy, but the dark green bulb of the plant has become wildly popular in a variety of mouthwatering dishes from Mexico to Vietnam.
